Description

Transform your leftover mashed potatoes into these irresistible cheese puffs! Golden and crispy on the outside, fluffy and cheesy on the inside, they’re perfect as a snack, appetizer, or side dish.

Ingredients

Units Scale
  • 2 cups leftover mashed potatoes
  • 2 large eggs, lightly beaten
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk (adjust for consistency)
  • 2 tablespoons chopped chives or green onions (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Non-stick cooking spray or melted butter for greasing

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick cooking spray or brush with melted butter.
  2. Mix the Ingredients: In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan cheese, garlic powder, and chives. Stir well. Add milk gradually until the mixture is smooth and scoopable.
  3. Portion into Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. Smooth the tops slightly.
  4. Bake: Bake in the preheated oven for 25-30 minutes, or until the tops are golden and edges are crisp.
  5. Cool and Serve: Let the puffs cool slightly in the tin before carefully removing them. Serve warm with sour cream or your favorite dipping sauce.

Notes

  • Add cooked bacon bits for a savory twist.
  • For extra crispiness, broil the puffs for the last 2-3 minutes of baking.
  • These puffs can be reheated in the oven or air fryer for a quick snack later.
