Description

These Leek and Cheese Biscuits are a savory, buttery delight! Packed with the mild sweetness of sautéed leeks and the richness of sharp cheddar, they’re flaky, tender, and full of flavor. Perfect for breakfast, brunch, or as a side for soups and stews, these biscuits are easy to make and impossible to resist!

Ingredients

Scale
  • Leeks: 1 cup, thinly sliced
  • Butter: 1/2 cup (1 stick), cold and cubed
  • Cheese: 1 cup sharp cheddar (or Gruyère), shredded
  • Flour: 2 cups all-purpose flour
  • Baking Powder: 1 tbsp
  • Salt: 1/2 tsp
  • Milk or Buttermilk: 3/4 cup
  • Optional Add-ins:
    • 1/2 tsp garlic powder (for extra depth)
    • 1/4 tsp smoked paprika (for a subtle smoky kick)

Instructions

1. Prepare the Leeks

  • Slice leeks thinly and sauté in 1 tbsp butter over medium heat until soft and fragrant (about 5 minutes).
  • Remove from heat and let cool.

2. Mix the Dry Ingredients

  • In a large bowl, whisk together flour, baking powder, and salt.

3. Cut in the Butter

  • Add cold cubed butter to the flour mixture.
  • Use a pastry cutter (or your hands) to work it in until the mixture resembles coarse crumbs.

4. Add Cheese and Leeks

  • Stir in the grated cheese and cooled leeks, distributing them evenly.

5. Form the Dough

  • Gradually add milk or buttermilk, mixing until a soft dough forms.

6. Shape and Cut

  • Roll out dough to ¾-inch thickness and cut into rounds or squares.

7. Bake

  • Place biscuits on a baking sheet and bake at 400°F for 12-15 minutes, or until golden brown.

8. Serve & Enjoy!

  • Serve warm with butter, honey, or hot honey for a sweet-savory twist.

Notes

  • Keep Ingredients Cold: Cold butter and milk make flakier biscuits.
  • Don’t Overwork the Dough: Mix until just combined for a tender texture.
  • Customize the Cheese: Try Gouda, Swiss, or Parmesan for a different flavor profile.
  • Freezer-Friendly: Freeze unbaked biscuits and bake from frozen when needed.
