Main Ingredients:
- 32 oz. bag tater tots, (frozen, not thawed)
- 1 lb. ground beef
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 1 oz. taco seasoning mix
- water
- 16 oz. sour cream
- 8 oz. sharp cheddar cheese (divided)
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. onion powder
Optional Toppings:
- diced tomatoes
- bell peppers
Instructions
- Prepare the Beef Mixture: Cook ground beef, onion, and bell pepper. Add taco seasoning and water. Simmer until thickened.
- Layer the Casserole: Arrange tater tots in a baking dish. Spread beef mixture over the tater tots.
- Combine Sour Cream Mixture: Mix sour cream, half of cheddar cheese, salt, pepper, and onion powder. Spread over the beef layer.
- Bake: Top with remaining cheddar cheese. Bake until bubbly and cheese is melted.
