For the Katsu:
- 2 boneless pork chops or chicken breasts, pounded thin

- 1 large egg, beaten
- 1 cup panko breadcrumbs

The Tonkatsu Sauce:
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp mirin or rice vinegar
- 1 tbsp brown sugar
- 1 tsp Dijon mustard (optional)
For the Bowl:
- Steamed white or brown rice
- Thinly shredded cabbage
- Optional toppings: green onions, sesame seeds, pickled ginger, fried egg
Instructions
- Prepare the Katsu: Season the pork or chicken with salt and pepper. Dredge in flour, dip in beaten egg, coat with panko breadcrumbs, and fry until golden brown.
- Make the Tonkatsu Sauce: Mix together ketchup, Worcestershire sauce, soy sauce, mirin, brown sugar, and Dijon mustard. Simmer until slightly thickened.
- Assemble the Bowl: Serve the crispy Katsu over steamed rice and shredded cabbage. Drizzle with Tonkatsu sauce and add optional toppings.
Notes
- You can use store-bought Tonkatsu sauce if preferred.
- For a lighter version, you can bake the Katsu instead of frying.
