Description

  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon kosher salt

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare the Peach Glaze: In a small saucepan, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Cook over low heat until well combined.
  2. Cook the Chicken: Season chicken thighs with salt, pepper, and chili powder. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side.
  3. Glaze the Chicken: Brush the cooked chicken thighs with the prepared peach glaze. Top with jalapeno slices and continue cooking for an additional 2-3 minutes.
