Main Ingredients:
- 2 pounds boneless skinless chicken thighs, fat removed, cut into 1-inch pieces
- 1/4 cup (32 g) cornstarch
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
- 1/3 cup (85 g) soy sauce
- 1/3 cup (83 g) water
- 1/3 cup (67 g) light brown sugar, packed
- 1 teaspoon sesame oil
- 2 teaspoons garlic, minced
- 1/2 yellow onion, diced
- 2 large jalapeno peppers, sliced into thin rounds
- sesame seeds, for garnish
- cooked white rice, for serving
Instructions
- Coat chicken: In a bowl, toss chicken pieces with cornstarch, salt, and pepper until well coated.
- Sear chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, then set aside.
- Make sauce: In the same skillet, combine soy sauce, water, brown sugar, sesame oil, garlic, onion, and jalapeno peppers. Cook until sauce thickens.
- Combine: Return chicken to the skillet and coat with the sauce. Cook until chicken is fully cooked.
- Serve: Sprinkle with sesame seeds and serve over cooked white rice.
Notes
- You can adjust the level of spiciness by adding more or fewer jalapeno peppers.
- For a thicker sauce, mix a little cornstarch with water and add it to the sauce while cooking.
