Instructions

  1. Prepare the Brownie Layer:
    1. Preheat the oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it well.
    2. In a medium bowl, whisk together the melted butter and sugar. Add the eggs and vanilla extract, and whisk until smooth.
    3. In a separate bowl, combine the flour, cocoa powder, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.
    4. Spoon about 1 tablespoon of brownie batter into each muffin cup, filling each about halfway. Bake for 10–12 minutes, or until a toothpick inserted into the center comes out mostly clean (it should be a little fudgy). Let them cool slightly while you prepare the pecan pie layer.
  2. Prepare the Pecan Pie Layer:
    1. In a medium bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth and combined.
    2. Stir in the pecans, ensuring they are evenly coated in the syrup mixture.
  3. Assemble the Bites:
    1. Spoon about 1 tablespoon of the pecan pie filling on top of each brownie bite. Make sure to distribute the pecans evenly.
    2. Return the bites to the oven and bake for an additional 12–15 minutes, or until the pecan pie layer is set and bubbly.
  4. Cool and Serve:
    1. Allow the pecan pie brownie bites to cool completely in the pan before removing them.
