- 6 slices of Irish bacon or thick-cut bacon, diced
- 1 large onion, chopped
- 4 cups chicken broth
- 2 large potatoes, peeled and diced
- 4 cups cabbage, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Garnish:
- Fresh parsley for garnish (optional)
Instructions
- Cook Bacon: In a large pot, cook diced bacon until crispy. Remove bacon and set aside, leaving the drippings in the pot.
- Saute Onion and Garlic: Add chopped onion and minced garlic to the pot with bacon drippings. Cook until onion is translucent.
- Add Potatoes and Cabbage: Stir in diced potatoes and chopped cabbage. Cook for a few minutes.
- Pour Broth: Add chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Season and Serve: Season with salt and pepper to taste. Serve hot, garnished with crispy bacon and fresh parsley if desired.
