Main Ingredients:

    • 6 slices of Irish bacon or thick-cut bacon, diced
    • 1 large onion, chopped
    • 4 cups chicken broth
    • 2 large potatoes, peeled and diced
    • 4 cups cabbage, chopped
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • 2 tablespoons olive oil or butter

Garnish:

  • Fresh parsley for garnish (optional)

Instructions

  1. Cook Bacon: In a large pot, cook diced bacon until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Saute Onion and Garlic: Add chopped onion and minced garlic to the pot with bacon drippings. Cook until onion is translucent.
  3. Add Potatoes and Cabbage: Stir in diced potatoes and chopped cabbage. Cook for a few minutes.
  4. Pour Broth: Add chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Season and Serve: Season with salt and pepper to taste. Serve hot, garnished with crispy bacon and fresh parsley if desired.
