For the salmon:
- 2 tablespoons honey
- 1/4 cup stoneground mustard
- 3–4 cloves of garlic, minced
- juice of 1 lemon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon paprika (optional, for color)
- 1–2 pounds salmon (cut into 3-4 pieces)
Extras:
- 4 cups salad greens
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 lemon, cut into wedges
- 1 baguette
Instructions
- Preheat the oven: Set the oven to 400°F (200°C).
- Mix the sauce: In a bowl, combine honey, mustard, garlic, lemon juice, salt, red pepper flakes, and paprika.
- Prepare the salmon: Place salmon on a baking sheet, brush with the sauce mixture.
- Bake the salmon: Bake for 12-15 minutes until the salmon is cooked through and the glaze is caramelized.
- Serve: Toss salad greens with olive oil and red wine vinegar. Serve salmon on a bed of greens with lemon wedges and baguette.
Notes
- Adjust the spice level by adding more or less red pepper flakes.
- For a crispier salmon, broil for a few minutes after baking.
