Description

For the salmon:

  • 2 tablespoons honey
  • 1/4 cup stoneground mustard
  • 34 cloves of garlic, minced
  • juice of 1 lemon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon paprika (optional, for color)
  • 12 pounds salmon (cut into 3-4 pieces)

Extras:

  • 4 cups salad greens
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon, cut into wedges
  • 1 baguette

Instructions

  1. Preheat the oven: Set the oven to 400°F (200°C).
  2. Mix the sauce: In a bowl, combine honey, mustard, garlic, lemon juice, salt, red pepper flakes, and paprika.
  3. Prepare the salmon: Place salmon on a baking sheet, brush with the sauce mixture.
  4. Bake the salmon: Bake for 12-15 minutes until the salmon is cooked through and the glaze is caramelized.
  5. Serve: Toss salad greens with olive oil and red wine vinegar. Serve salmon on a bed of greens with lemon wedges and baguette.

Notes

  • Adjust the spice level by adding more or less red pepper flakes.
