Main Ingredients:

  • 2 tbsp hot honey
  • 250 g lean beef mince
  • Half a pack of taco seasoning (approx 2 tbsp)
  • 200 g cottage cheese
  • 500 g sweet potato
  • 200 g tenderstem broccoli
  • 1 medium avocado

Seasonings:

  • 1 tsp salt
  • 1 tsp smoked paprika
  • Olive oil spray

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the sweet potatoes: Peel and chop them into cubes, then spread them on a baking tray. Spray with olive oil and season with salt and smoked paprika. Roast in the oven for 20-25 minutes until tender.
  3. Cook the beef: In a skillet, cook the beef mince until browned. Add taco seasoning and hot honey, stirring to combine. Cook for another 5 minutes.
  4. Prepare the broccoli: Steam or roast the tenderstem broccoli until tender.
  5. Assemble the bowls: Divide the roasted sweet potatoes, beef mixture, broccoli, avocado, and cottage cheese among serving bowls.
