Description

Ingredients
For the Skewers
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 12 oz smoked sausage or kielbasa, sliced into rounds
- 1 bell pepper, cut into chunks (optional)
- 1 red onion, cut into chunks (optional)
- 8–10 skewers (wooden or metal)
For the Honey Mustard Glaze
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 1 tbsp whole grain mustard
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional, for heat)
Instructions
1. Prepare the Marinade

In a bowl, whisk together honey, Dijon mustard, whole grain mustard, garlic, olive oil, salt, and pepper.
2. Marinate the Chicken

Toss the chicken pieces with half of the marinade.

Let sit for at least 30 minutes (or refrigerate overnight for deeper flavor).
3. Assemble the Skewers

Thread chicken, sausage, and optional vegetables onto skewers, alternating for even distribution.
4. Grill to Perfection

Preheat the grill to medium-high heat (375-400°F).

Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked.
5. Brush with Extra Glaze

During the last few minutes of grilling, brush the skewers with the remaining honey mustard glaze.

Grill for another 1-2 minutes until caramelized.
6. Rest and Serve

Let the skewers rest for a few minutes before serving to retain juiciness.

- Soak Wooden Skewers: If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
