Description

Juicy chicken and smoky sausage are coated in a homemade honey mustard glaze, then grilled to perfection. These skewers are easy to prepare and perfect for barbecues, weeknight dinners, or meal prep.

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 12 oz smoked sausage or kielbasa, sliced into rounds
  • 1 bell pepper, cut into chunks (optional)

  • 810 skewers (wooden or metal)

For the Honey Mustard Glaze

  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for heat)

Instructions

1. Prepare the Marinade

  • In a bowl, whisk together honey, Dijon mustard, whole grain mustard, garlic, olive oil, salt, and pepper.

2. Marinate the Chicken

  • Toss the chicken pieces with half of the marinade.

  • Let sit for at least 30 minutes (or refrigerate overnight for deeper flavor).

3. Assemble the Skewers

  • Thread chicken, sausage, and optional vegetables onto skewers, alternating for even distribution.

4. Grill to Perfection

  • Preheat the grill to medium-high heat (375-400°F).

  • Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked.

5. Brush with Extra Glaze

  • During the last few minutes of grilling, brush the skewers with the remaining honey mustard glaze.

  • Grill for another 1-2 minutes until caramelized.

6. Rest and Serve

  • Let the skewers rest for a few minutes before serving to retain juiciness.

  • Soak Wooden Skewers: If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
