For the Pastry:

Prepare the Pastry:
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry on a lightly floured surface. Cut into rectangles, about 4×6 inches each, to form the base and top of each Pop-Tart.
- Place one rectangle on a parchment-lined baking sheet.
Make the Filling:
- In a bowl, whisk the eggs and season with salt, pepper, and garlic powder if using. Scramble the eggs in a pan over medium heat, stirring frequently, until fully cooked.
- Remove from heat and stir in the cooked bacon or sausage and cheddar cheese until well combined.
- Add cream cheese and mix until melted and smooth.
Assemble the Pop-Tarts:
- Spoon the scrambled egg mixture onto the center of each pastry rectangle, leaving a small border around the edges.
- Place a second pastry rectangle on top of the filling. Use a fork to press the edges of the pastry together to seal the Pop-Tart.
- Brush the top with the beaten egg for a golden finish.
Bake:
- Bake for 18–20 minutes, or until the pastries are golden brown and puffed.
- Remove from the oven and let cool slightly.
Glaze (optional):
- In a small bowl, mix melted butter with garlic powder (if using) and brush over the top of the Pop-Tarts.
- Garnish with fresh herbs like chives or parsley for a little extra flavor and color.
