Description

Instructions

  1. Prepare the Peaches:

    • Bring a large pot of water to a boil.
    • Score an “X” on the bottom of each peach and blanch for 30 seconds.
    • Transfer to an ice bath, then peel and remove pits.
    • Slice peaches and place them in a large pot.
  2. Cook the Peaches:

    • Add sugar, lemon juice, water, and spices (if using) to the pot.
    • Simmer over low heat, stirring occasionally, until peaches soften (about 30 minutes).
    • Use an immersion blender or food processor to puree the mixture until smooth.
  3. Reduce to Perfection:

    • Return the puree to the pot and cook on low, stirring often.
    • Let it simmer for 1-2 hours until thick and spreadable.
    • Stir in vanilla extract (if using) and remove from heat.
