Cookies:
- 1 1/4 cups unsalted butter, at room temperature
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 Tablespoon honey
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3 cups uncooked quick-cooking oats*
Instructions
- Preheat oven: Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add wet ingredients: Mix in the egg, honey, and vanilla extract until well combined.
- Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and cloves. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Stir in oats: Fold in the oats until evenly distributed.
- Bake: Drop spoonfuls of dough onto the prepared baking sheets and bake for 10-12 minutes, or until lightly golden. Allow to cool completely on a wire rack.
- Assemble: Once the cookies are cooled, sandwich together with your favorite cream filling.
