Cake:
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil or canola oil
- 2 tsp vanilla extract
- 1 cup boiling water
Coconut-Pecan Frosting:
- 3/4 cup evaporated milk
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup butter
- 3 large egg yolks
- 1 tbsp vanilla extract
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
Chocolate Frosting:
- 1/2 cup butter
- 2/3 cup unsweetened cocoa powder
- 1/3 cup evaporated milk
- 3 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Prepare the Cake: Mix dry ingredients, add wet ingredients, pour in boiling water, and bake in pans.
- Make the Coconut-Pecan Frosting: Cook ingredients except coconut and pecans, then stir in coconut and pecans.
- Prepare the Chocolate Frosting: Melt butter, stir in cocoa, add milk and powdered sugar, then mix in vanilla.
- Assemble the Cake: Layer cake with coconut-pecan frosting, then cover with chocolate frosting.
Notes
- You can add extra coconut or pecans to the frosting for additional texture.
- Make sure to cool the cakes completely before frosting to prevent melting.
