Ingredients
- 1 cup raw almonds
- 1/2 cup water (plus more as needed)
- 1/4 cup olive oil
- 3 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons nutritional yeast
- 2 garlic cloves
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 3/4 teaspoon salt (adjust to taste)
Instructions
-
Soak the Almonds:
-
Soak the almonds in hot water for at least 1 hour (or overnight in the fridge). Drain before using.
-
-
Blend Until Smooth:
-
In a high-speed blender, combine the soaked almonds, water, olive oil, lemon juice, garlic, nutritional yeast, smoked paprika, cumin, cayenne (if using), and salt. Blend until completely smooth.
-
-
Adjust Consistency:
-
If the sauce is too thick, add more water, one tablespoon at a time, until you reach your desired texture.
-
-
Taste and Adjust:
-
Add more lemon juice for tang, more salt for balance, or more smoked paprika for depth.
-
-
Chill and Serve:
-
Transfer to a container and refrigerate for at least 30 minutes before serving to let the flavors meld.
-
Notes
- Use a High-Speed Blender: Ensures a smooth and creamy texture.
- Let It Chill: The flavors develop even more after resting in the fridge.
- Make It Spicier: Add extra cayenne or blend in a chipotle pepper for heat.
- Storage: Keep refrigerated for up to 1 week or freeze for up to 2 months.
