Description

This Hobo Casserole with Ground Beef & Potatoes is a quick and delicious one-pot meal that’s perfect for busy weeknights. Layers of thinly sliced potatoes, seasoned ground beef, and two types of cheese come together to create a comforting and satisfying dish.

  • 1 lb ground beef
  • 45 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup milk (optional)

For the Seasoning & Cheese:

  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Brown Ground Beef: In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Sauté Onion & Garlic: Add olive oil, onion, and garlic to the skillet. Cook until softened.
  4. Layer Casserole: In a greased casserole dish, layer half of the potatoes, beef mixture, and cheeses. Repeat the layers.
  5. Add Liquid: Pour beef broth and milk over the casserole.
  6. Bake: Cover the dish with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  7. Garnish & Serve: Garnish with fresh parsley before serving.

Notes

  • You can customize this casserole by adding your favorite vegetables or swapping out the cheeses for different flavors.
  • If you prefer a crispy top, broil the casserole for a few minutes at the end of baking.
