Description

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine (optional)
  • 1 tablespoon butter
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, sage, lemon zest, Dijon mustard, salt, and pepper. Rub this herb mixture evenly over the pork loin, covering it completely.
  3. Heat a large oven-safe skillet over medium-high heat. Add a little olive oil, then sear the pork loin on all sides until browned (about 2-3 minutes per side).
  4. Once the pork is browned, remove it from the skillet and set it aside.
  5. In the same skillet, add chicken broth and white wine (if using). Stir to combine, scraping up any browned bits from the bottom of the skillet.
  6. Return the pork loin to the skillet and transfer the skillet to the preheated oven. Roast for 60-75 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  7. Once cooked, remove the pork from the oven and let it rest for 10-15 minutes before slicing.
  8. While the pork rests, add butter to the pan juices and stir to make a flavorful sauce.
  9. Slice the pork and serve with the pan sauce, garnished with fresh parsley.
