Description

Tender, juicy chicken thighs seared to perfection and smothered in a luscious garlic herb butter sauce. This quick and easy recipe is packed with flavor and perfect for weeknight dinners or special occasions

Ingredients

Units Scale
  • For the Chicken Thighs:
    • 6 bone-in, skin-on chicken thighs
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1/2 tsp paprika
    • 1/2 tsp garlic powder
    • 2 tbsp olive oil
  • For the Garlic Herb Butter Sauce:
    • 4 tbsp unsalted butter
    • 4 garlic cloves, minced
    • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
    • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
    • 1 tbsp fresh parsley, chopped
    • 1/4 cup chicken broth (optional, for thinner sauce)

Instructions

  1. Prepare the Chicken:
    1. Pat the chicken thighs dry with paper towels. Season with salt, black pepper, paprika, and garlic powder on both sides.
  2. Sear the Chicken:
    1. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin side down, and cook for 5–7 minutes until the skin is golden and crispy. Flip and cook the other side for 3–5 minutes. Remove the chicken and set aside.
  3. Make the Garlic Herb Butter Sauce:
    1. Reduce the heat to medium. Add butter to the skillet and let it melt. Stir in garlic, thyme, rosemary, and parsley, cooking for about 1–2 minutes until fragrant.
    2. If using chicken broth, pour it into the skillet and stir, scraping up any browned bits from the bottom. Simmer for 2–3 minutes.
  4. Combine and Cook:
    1. Return the chicken thighs to the skillet, skin side up, and spoon the garlic herb butter sauce over them.
    2. Cover and cook on low heat for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  5. Serve:
    1. Transfer the chicken thighs to a serving plate and drizzle with the garlic herb butter sauce. Garnish with extra parsley and serve immediately.

Notes

  • For a crispy finish, broil the chicken thighs in the oven for 2–3 minutes before serving.
  • This dish pairs beautifully with mashed potatoes, roasted vegetables, or crusty bread to soak up the sauce.
  • You can substitute boneless chicken thighs, adjusting the cooking time as needed.
