For the Steak Bites:
- 1 lb flank steak or sirloin, cut into bite-sized cubes
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1 tbsp fresh parsley, chopped (for garnish)
For the Loaded Baked Potatoes:
- 4 large russet potatoes, scrubbed and pierced with a fork
- 1 tbsp olive oil
- Salt, to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/4 cup cooked bacon bits (optional)
- 1/4 cup butter
Instructions
- Bake the Potatoes:
- Preheat your oven to 400°F (200°C).
- Rub the potatoes with olive oil and season them with a pinch of salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- Prepare the Steak Bites:
- While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
- Season the steak cubes with salt, pepper, garlic powder, smoked paprika, and onion powder.
- Add the steak cubes to the hot skillet and cook for 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.
- Remove the steak from the skillet and set it aside.
- Assemble the Loaded Potatoes:
- Once the potatoes are done, slice them open and fluff the insides with a fork.
- Add a tablespoon of butter to each potato and mash the insides slightly.
- Top with shredded cheddar cheese, sour cream, green onions, and cooked bacon bits, if using.
- Top with Steak Bites:
- Spoon the cooked steak bites on top of each loaded baked potato.
- Garnish with fresh parsley.
- Serve:

- If you prefer a different cut of steak, ribeye or New York strip work great for this recipe as well.
