Description

These hearty steak bites served on loaded baked potatoes are the perfect combination of tender, flavorful steak and creamy, cheesy potatoes. A comforting, filling meal that’s sure to impress, making it ideal for a weekend dinner or special occasion!

For the Steak Bites:

  • 1 lb flank steak or sirloin, cut into bite-sized cubes
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tbsp fresh parsley, chopped (for garnish)

For the Loaded Baked Potatoes:

  • 4 large russet potatoes, scrubbed and pierced with a fork
  • 1 tbsp olive oil
  • Salt, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/4 cup cooked bacon bits (optional)
  • 1/4 cup butter

Instructions

  1. Bake the Potatoes:
    1. Preheat your oven to 400°F (200°C).
    2. Rub the potatoes with olive oil and season them with a pinch of salt.
    3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  2. Prepare the Steak Bites:
    1. While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
    2. Season the steak cubes with salt, pepper, garlic powder, smoked paprika, and onion powder.
    3. Add the steak cubes to the hot skillet and cook for 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.
    4. Remove the steak from the skillet and set it aside.
  3. Assemble the Loaded Potatoes:
    1. Once the potatoes are done, slice them open and fluff the insides with a fork.
    2. Add a tablespoon of butter to each potato and mash the insides slightly.
    3. Top with shredded cheddar cheese, sour cream, green onions, and cooked bacon bits, if using.
