Ingredients

  • 1 lb ground beef
  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 cup beef broth

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook the ground beef: Heat olive oil in a skillet over medium heat. Add onions and cook until softened. Add ground beef and cook until browned. Drain excess fat. Stir in garlic, salt, pepper, smoked paprika, oregano, garlic powder, and onion powder. Remove from heat.
  3. Prepare the sauce: In a bowl, mix the cream of mushroom soup, milk, and beef broth until well combined.
  4. Layer the casserole: In the prepared baking dish, layer half of the sliced potatoes, followed by half of the cooked beef. Repeat with remaining potatoes and beef.
  5. Pour sauce over layers and top with shredded cheese.
  6. Bake uncovered for 50–60 minutes, or until potatoes are tender and cheese is golden and bubbly.
  7. Let it rest for 10 minutes before serving.

  • You can substitute ground turkey or chicken for a lighter version.
  • For extra creaminess, add ½ cup of sour cream to the sauce.
