- 2.5 lbs Boneless Skinless Chicken Thighs
- 3 cans Great Northern Beans, drained
- 2 8 oz cans Diced Green Chilies
- 1 Very large yellow Onion (diced)
- 1 Tbl Garlic, (minced)
- 2 tsp Cumin
- 1 tsp Chili Powder
- 1/4 tsp White Pepper
- 1 Tbl Coarse Real Salt *
- 2 cups Chicken Broth
Optional Ingredients:

- 1 Cup Coconut Milk * or regular milk
- 1/4 cup Arrowroot Starch * or cornstarch
- 1/2 cup Water
Topping:

- 1/3 Cup Cilantro (chopped)
Instructions
- Prepare Ingredients: Cut chicken thighs into bite-sized pieces, dice onion, and mince garlic.
- Cook in Crockpot: Add all main ingredients to the crockpot along with spices. Cook on low for 6-8 hours.
- Thicken (Optional): Mix arrowroot starch with water, add to the chili, and cook for an additional 30 minutes.
- Serve: Top with chopped cilantro before serving.
