  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter (30g)
  • 7 oz mushrooms, sliced about 1/8″ thick (approximately 2 full cups, 200g)
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon thyme leaves
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese, sliced (or any cheese that melts well, 80g)
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Season Chicken: Season the chicken breasts with salt and pepper.
  3. Prepare Filling: In a skillet, melt butter and sauté mushrooms, garlic, and thyme until mushrooms are golden. Add spinach and cook until wilted.
  4. Stuff Chicken: Cut a pocket into each chicken breast and stuff with mushroom mixture and cheese.
