Description

These healthy apple muffins are packed with fiber and nutrients, making them a delicious and guilt-free treat for any time of day.


Ingredients

– 1 large apple (peeled, cored and grated)

– 3/4 teaspoon cinnamon (ground)

– 1 tablespoon honey

– 1 teaspoon lemon juice

– 3/4 cup whole wheat flour

– 3/4 cup wheat bran flour (coarse)

– 1/4 cup almond meal

– 1 teaspoon baking soda

– 1/2 teaspoon ground nutmeg

– 1/8 teaspoon salt

– 1 1/2 cups applesauce

– 1 tablespoon canola oil

– 2 egg whites

– 1/4 cup brown sugar (packed)

– 2 teaspoon vanilla extract

– 1/2 cup chopped walnuts

– 1/4 cup granola


Instructions

1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

2. In a large bowl, mix together the grated apple, cinnamon, honey, and lemon juice.

3. In another bowl, combine the whole wheat flour, wheat bran flour, almond meal, baking soda, nutmeg, and salt.

4. Add the applesauce, canola oil, egg whites, brown sugar, and vanilla extract to the dry ingredients and mix well.

5. Gently fold in the apple mixture, walnuts, and granola.

6. Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow the muffins to cool before serving.


Notes

– For a sweeter muffin, add more honey or brown sugar to taste.

– You can substitute the walnuts with pecans or almonds for a different flavor.
