Description

A hearty and flavorful soup made with ground beef, potatoes, mixed vegetables, and a savory broth.


Ingredients

– 1 lb Ground Beef

– 3 Potatoes, peeled and diced

– 1 Onion, finely diced

– 1 tbsp minced Garlic

– 3 cup Beef Broth

– 24 oz Italian/Spaghetti Sauce

– 14.5 oz Diced Tomatoes

– 2 tsp Worcestershire Sauce

– 1 teaspoon Italian seasoning

– 1 Bay Leaf

– 1/4 tsp Crushed Red Pepper Flakes

– Salt and Pepper to taste

– 24 oz Frozen Mixed Vegetables, thawed


Instructions

1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

2. Add the diced potatoes, onion, and garlic to the pot and cook until the vegetables are slightly softened.

3. Stir in the beef broth, Italian sauce, diced tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, crushed red pepper flakes, salt, and pepper.

4. Simmer the soup for about 20 minutes, then add the thawed mixed vegetables and continue cooking until all the vegetables are tender.

5. Discard the bay leaf before serving. Adjust seasoning if needed.


Notes

– For added flavor, consider adding a splash of hot sauce before serving.

– This soup can easily be made in a slow cooker for a hands-off meal prep option.
