- 6 oz. package egg noodles
- 1 pound lean ground beef
- 1 small onion diced
- 1 cup frozen vegetables (peas, carrots, and corn)

- 1 tsp Italian Seasoning
- 8 oz can tomato sauce
- 14 oz can diced tomatoes
- 2 cups cheddar cheese shredded and divided
- Salt and pepper
Instructions
- Cook Noodles: Cook egg noodles according to package instructions, then drain and set aside.
- Brown Beef: In a large skillet, brown the ground beef with diced onions until cooked through. Drain off excess fat.
- Add Vegetables and Seasonings: Stir in frozen vegetables, garlic, Italian seasoning, tomato sauce, diced tomatoes, salt, and pepper.
- Layer Casserole: In a greased casserole dish, layer cooked noodles, beef mixture, and 1 cup of shredded cheddar cheese. Repeat layers.
- Bake: Cover with foil and bake at 350°F for 20-25 minutes. Remove foil, sprinkle remaining cheese on top, and bake for an additional 5 minutes until cheese is melted.
