Description

Main Ingredients:

  • 4 strips bacon, chopped
  • 1 small yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 small carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 2 cups fresh or frozen corn
  • 2 cups cooked ham, diced
  • 1 lb potatoes, peeled and diced
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Cook Bacon: In a large pot, cook bacon until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Sauté Vegetables: Add onion, celery, carrots, and garlic to the pot. Cook until softened.
  3. Add Flour: Sprinkle flour over the vegetables and cook for a few minutes.
  4. Simmer: Pour in chicken broth and cream. Add corn, ham, potatoes, thyme, bay leaf, salt, and pepper. Simmer until potatoes are tender.
  5. Serve: Remove bay leaf, adjust seasoning if needed, and serve hot, garnished with the cooked bacon.

Notes

  • You can add extra veggies like peas or bell peppers for more flavor and color.
  • To make it healthier, use low-fat milk instead of heavy cream.
