- 4 small boneless skinless chicken breasts (1 1/4 – 1 1/2 lb. total weight)
- 1 ripe avocado
- 2 tbsp. diced red onion
- 1/4 cup chopped tomato
- 1 tsp. lime juice
- 3/4 tsp. salt divided
- 2 large eggs
- 1 cup plain panko breadcrumbs
- 2 tsp. lime zest
- 1/2 tsp. garlic powder
- 1/4 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- Cooking spray
Instructions
- Prepare Guacamole: In a bowl, mash together the avocado, red onion, tomato, lime juice, and ¼ tsp. salt.
- Stuff Chicken Breasts: Cut a pocket into each chicken breast. Stuff each with guacamole mixture.
- Bread Chicken: In a shallow dish, mix breadcrumbs, lime zest, garlic powder, chili powder, cumin, salt, and pepper. Dip stuffed chicken in beaten eggs, then coat with breadcrumb mixture.
- Cook Chicken: Place breaded chicken on a baking sheet. Spray with cooking spray and bake at 375°F for 25-30 minutes or until cooked through.
Notes
- You can also grill the stuffed chicken breasts for a smoky flavor.
