  • 1 ripe avocado
  • 2 tbsp. diced red onion
  • 1/4 cup chopped tomato
  • 1 tsp. lime juice
  • 3/4 tsp. salt divided
  • 2 large eggs
  • 1 cup plain panko breadcrumbs
  • 2 tsp. lime zest
  • 1/2 tsp. garlic powder
  • 1/4 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • Cooking spray

Instructions

  1. Prepare Guacamole: In a bowl, mash together the avocado, red onion, tomato, lime juice, and ¼ tsp. salt.
  2. Stuff Chicken Breasts: Cut a pocket into each chicken breast. Stuff each with guacamole mixture.
  3. Bread Chicken: In a shallow dish, mix breadcrumbs, lime zest, garlic powder, chili powder, cumin, salt, and pepper. Dip stuffed chicken in beaten eggs, then coat with breadcrumb mixture.
  4. Cook Chicken: Place breaded chicken on a baking sheet. Spray with cooking spray and bake at 375°F for 25-30 minutes or until cooked through.
