Ingredients
– 1 pound ground beef
– 1 onion, chopped
– 1 red bell pepper, chopped
– 2 cloves garlic, minced
– 1 cup long grain white rice
– 1/2 teaspoon salt
– 1/2 teaspoon ground cumin
– 2 tablespoons tomato paste
– 1 (14.5 ounce) can diced tomatoes
– 1 1/2 cups lower-sodium beef broth
– 1 (4 ounce can) diced green chiles
– 2 teaspoons Worcestershire sauce
– 1 cup shredded Cheddar or Monterey Jack cheese
– 1 tablespoon chopped green onion or cilantro
Instructions
1. In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat.
2. Add the onion, bell pepper, and garlic to the skillet and cook until softened.
3. Stir in the rice, salt, cumin, tomato paste, diced tomatoes, beef broth, green chiles, and Worcestershire sauce.
4. Bring the mixture to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked through.
5. Sprinkle the shredded cheese on top and cover the skillet until the cheese is melted.
6. Garnish with chopped green onion or cilantro before serving.
Notes
– For a spicier version, add some diced jalapenos or a pinch of red pepper flakes.
– You can substitute ground turkey or chicken for the ground beef if desired.
