- 4 nectarines, pitted and quartered
- 8 ounces burrata cheese, torn
- 8 slices prosciutto
- 4 ounces cherry tomatoes, halved
- 2 heirloom tomatoes, halved and cut into eighths
- 1/2 cup fresh cherries, pitted and halved
- 1/2 cup mixed baby spring greens
- Finishing salt, fresh ground black pepper
- Grilled baguette, for serving
For the Vinaigrette
- 2 tablespoons fresh lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon zest
- 1 tablespoon fresh oregano, roughly minced
- 1 tablespoon fresh mint, roughly minced
- 1 tablespoon fresh lemon thyme leaves
- 1/2 cup extra virgin olive oil
- Pinch of salt, fresh ground black pepper as desired
Instructions
- Prepare the Vinaigrette: In a small bowl, whisk together lemon juice, white wine vinegar, lemon zest, herbs, and olive oil. Season with salt and pepper.
- Grill the Nectarines: Preheat grill to medium-high heat. Grill nectarines until grill marks appear, about 2-3 minutes per side. Remove from heat and let cool.
- Assemble the Salad: In a large bowl, combine grilled nectarines, burrata cheese, prosciutto, tomatoes, cherries, and spring greens. Drizzle with vinaigrette and toss gently to combine.
- Serve: Divide the salad among plates, season with finishing salt and black pepper. Serve with grilled baguette slices.
