Description

Grilled Chimichurri Chicken is a flavorful and vibrant dish made with juicy chicken thighs marinated in a zesty chimichurri sauce. Perfect for a BBQ or weeknight dinner.

  • Chimichurri Sauce:

    • 1 cup firmly packed fresh flat-leaf parsley leaves, finely minced
    • 2 tablespoons fresh oregano leaves, finely minced
    • 2 garlic cloves, finely minced
    • 1 small shallot, finely minced
    • 1 small serrano chili (optional), seeds removed and finely minced
    • 2 tablespoons red wine vinegar
    • 1/2 teaspoon sea salt
    • 1/8 teaspoon freshly ground black pepper
    • 1/2 cup extra virgin olive oil
  • Chicken:

    • 2 lbs. boneless skinless chicken thighs

Instructions

  1. Prepare the Chimichurri Sauce: In a bowl, mix together parsley, oregano, garlic, shallot, serrano chili, red wine vinegar, salt, and pepper. Slowly drizzle in olive oil while stirring to combine.
  2. Marinate the Chicken: Place chicken thighs in a resealable bag or container, pour half of the chimichurri sauce over the chicken, and marinate for at least 1 hour or overnight.
  3. Grill the Chicken: Preheat grill to medium-high heat. Grill the chicken thighs for about 6-7 minutes per side or until cooked through.
  4. Serve: Serve the grilled chicken with the remaining chimichurri sauce on top.

Notes

  • You can adjust the spice level by adding more or less serrano chili.
  • For extra flavor, marinate the chicken for longer periods.
