Main Ingredients:
- 64 oz chicken or vegetable broth
- 3 tablespoon olive oil
- 1 medium onion minced
- 1 medium carrot grated on a large grater
- 3 large potatoes cubed
- 4 cups spinach chopped
- 1 zucchini cubed
- 3 tablespoon lemon juice
Additional Ingredients:
- 4 egg hard-boiled and cubed
- 1/2 c parsley or dill chopped
- salt, pepper to taste
- sour cream for serving
Instructions
- Saute Vegetables: In a large pot, heat olive oil and saute onion and carrot until softened. Add potatoes, zucchini, and spinach, cooking until slightly wilted.
- Add Broth: Pour in the broth and lemon juice, simmer until vegetables are tender.
- Finish Soup: Stir in hard-boiled eggs, parsley or dill, and season with salt and pepper. Serve with a dollop of sour cream.
Notes
- You can customize this soup with additional vegetables like bell peppers or peas.
- For a richer flavor, use homemade broth instead of store-bought.
