Description

Green Borscht is a nutritious Ukrainian spinach soup filled with hearty vegetables and flavorful broth, topped with hard-boiled eggs and fresh herbs for a satisfying meal.

Main Ingredients:

  • 64 oz chicken or vegetable broth
  • 3 tablespoon olive oil
  • 1 medium onion minced
  • 1 medium carrot grated on a large grater
  • 3 large potatoes cubed
  • 4 cups spinach chopped
  • 1 zucchini cubed
  • 3 tablespoon lemon juice

Additional Ingredients:

  • 4 egg hard-boiled and cubed
  • 1/2 c parsley or dill chopped
  • salt, pepper to taste
  • sour cream for serving

Instructions

  1. Saute Vegetables: In a large pot, heat olive oil and saute onion and carrot until softened. Add potatoes, zucchini, and spinach, cooking until slightly wilted.
  2. Add Broth: Pour in the broth and lemon juice, simmer until vegetables are tender.
  3. Finish Soup: Stir in hard-boiled eggs, parsley or dill, and season with salt and pepper. Serve with a dollop of sour cream.

Notes

  • You can customize this soup with additional vegetables like bell peppers or peas.
  • For a richer flavor, use homemade broth instead of store-bought.
