Description
This Greek Chicken Marinade is a flavorful blend of olive oil, lemon juice, garlic, and herbs that will take your grilled chicken to the next level. It’s perfect for a quick and easy weeknight meal or a weekend barbecue.
Ingredients
– 4 boneless skinless chicken breasts, pounded to even thickness (approximately 1 1/2 to 2 pounds)
– 1/2 cup olive oil
– 1/3 cup fresh squeezed lemon juice
– 1 tablespoon minced garlic
– 2 teaspoons honey
– 1 teaspoon salt
– 1 teaspoon dried parsley flakes
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried thyme
– 1/4 teaspoon black pepper
Optional Garnish:
– 1 tablespoon fresh chopped parsley
– Small lemon wedges, to squeeze onto the grilled chicken before serving
Instructions
1. In a small bowl, whisk together the olive oil, lemon juice, garlic, honey, salt, parsley, oregano, thyme, and black pepper.
2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it is evenly coated. Refrigerate for at least 30 minutes, or up to 4 hours.
3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes per side, or until cooked through.
4. Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
– For extra flavor, marinate the chicken overnight.
– You can also use this marinade for vegetables or seafood.
