Description

These Greek Chicken Gyros are packed with flavor from the honey Dijon mustard, garlic, lemon zest, and oregano marinade. They are tender and juicy, perfect for stuffing into pita bread with your favorite toppings.

  • 12 boneless skinless chicken thighs (1.3kg)
  • 1/8 cup olive oil
  • 2 tablespoons honey Dijon mustard
  • 6 cloves minced garlic
  • lemon zest from two lemons
  • 1/2 tablespoon salt
  • dry oregano
  • 1 cup water or stock

Instructions

  1. Marinate the chicken: Combine olive oil, mustard, garlic, lemon zest, salt, and oregano in a bowl. Add the chicken thighs, coat well, cover, and refrigerate for at least 1 hour.
  2. Cook the chicken: Preheat the oven to 400°F. Place the marinated chicken in a baking dish, pour water or stock in the pan, and bake for 25-30 minutes or until cooked through.
  3. Assemble the gyros: Slice the cooked chicken, place in pita bread, and add your favorite toppings like tzatziki sauce, tomatoes, onions, and lettuce.
