Description

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 2 large egg yolks
  • 1/2 tsp garlic powder
  • 1/4 tsp ground white pepper
  • Salt to taste
  • 1/4 cup freshly grated Parmesan cheese (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Prepare the Potatoes:
    1. Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook the potatoes for about 15–20 minutes, or until they are fork-tender. Drain well.
  2. Mash the Potatoes:
    1. Return the drained potatoes to the pot and mash them until smooth. For a creamier texture, use a potato ricer or food mill.
  3. Make the Potato Mixture:
    1. In a separate saucepan, heat the butter, heavy cream, and milk over low heat until the butter is melted. Stir in the garlic powder, white pepper, and salt.
    2. Gradually add the butter mixture to the mashed potatoes, stirring until smooth and well combined.
  4. Add the Egg Yolks:
    1. Stir in the egg yolks one at a time until fully incorporated. The egg yolks will help make the potatoes light and creamy.
  5. Pipe the Potatoes:
    1. Preheat the oven to 400°F (200°C).
    2. Transfer the mashed potato mixture to a piping bag fitted with a large star tip. Pipe the potatoes into swirls or mounds on a baking sheet lined with parchment paper.
  6. Bake the Potatoes:
    1. Bake for 15–20 minutes, or until the tops are golden and crispy.
  7. Garnish and Serve:
    1. Sprinkle with freshly grated Parmesan cheese and chopped parsley for an extra touch of flavor and color. Serve immediately.

Notes

  • You can prepare the mashed potatoes ahead of time and refrigerate them before piping and baking. Just allow the potatoes to come to room temperature before piping.
  • For a twist, try adding a pinch of smoked paprika or finely grated cheddar cheese to the potato mixture.
