Scale
- 2 chicken breasts, boneless and skinless, diced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 bag (9 oz) refrigerated cheese tortellini
- 1 cup broccoli florets (steamed or cooked)
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
- 1 tablespoon butter (optional for extra richness)
- 1 teaspoon Italian seasoning (optional for extra flavor)
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken breasts and cook until golden brown and cooked through, about 6-8 minutes. Season with salt, pepper, and Italian seasoning. Remove from skillet and set aside.
- Make the sauce: In the same skillet, melt butter (optional). Add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add Parmesan: Stir in the grated Parmesan cheese and let the sauce simmer for 3-5 minutes until it thickens slightly. Season with salt and pepper to taste.
- Cook the tortellini: While the sauce simmers, cook the tortellini according to the package directions. Drain and set aside.
- Combine: Add the cooked tortellini and broccoli to the skillet with the creamy sauce. Stir to coat evenly.
- Finish: Return the cooked chicken to the skillet and toss everything together until well combined and heated through. Adjust seasoning with salt and pepper if needed.
- Serve: Garnish with freshly chopped parsley if desired. Serve hot and enjoy!
Notes
- For a lighter version, substitute the heavy cream with half-and-half or milk.
- You can add more vegetables like spinach, peas, or mushrooms to enhance the dish.
- This dish is best served immediately, but leftovers can be stored in the fridge for up to 3 days.
