Description

Mushroom Potatoes with Creamy Parmesan and Garlic Sauce is a decadent and comforting dish that combines tender potatoes with savory mushrooms in a rich, creamy sauce. The garlic and Parmesan bring bold, savory flavors that make this dish irresistible. It’s the perfect side dish for any meal or can even be served as a main course for vegetarians

Ingredients

Units Scale
  • 4 medium-sized potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1/2 cup onions, finely chopped
  • 2 cups mushrooms, sliced (button mushrooms or cremini)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 tbsp butter (optional, for richness)

Instructions

  1. Prepare the Potatoes: Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender (about 10-12 minutes). Drain and set aside.
  2. Sauté the Mushrooms and Onion: In a large skillet, heat olive oil over medium heat. Add onions and sauté until softened and translucent. Add sliced mushrooms and cook for 5-7 minutes until the mushrooms release their moisture and become tender.
  3. Add Garlic and Seasoning: Stir in the minced garlic and cook for another minute, until fragrant. Season with salt and pepper to taste.
  4. Make the Creamy Sauce: Pour in the heavy cream and bring the mixture to a simmer. Reduce heat to low and stir in Parmesan cheese until melted and the sauce thickens, about 3-4 minutes. If the sauce is too thick, add a little bit of milk to reach your desired consistency.
  5. Combine Potatoes and Sauce: Add the cooked potatoes to the skillet and stir gently to coat the potatoes in the creamy sauce. If desired, stir in a tablespoon of butter for extra richness.
  6. Garnish and Serve: Garnish with fresh chopped parsley and serve warm.

Notes

  • You can add more vegetables like spinach or peas to this dish for extra color and flavor.
  • This dish can be made ahead and stored in the fridge for up to 2-3 days. Reheat on the stovetop or in the microwave.
  • For a lighter version, you can substitute the heavy cream with half-and-half or a lower-fat milk.
