For the Chicken:
- 4 boneless skinless chicken breasts (or thighs)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

For the Potatoes:
- 1.5 pounds baby Yukon Gold or red potatoes halved
- 3 tablespoons olive oil
- 4 cloves garlic minced
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Garnish:
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C).
- Season Chicken: In a small bowl, mix Italian seasoning, smoked paprika, salt, and pepper. Rub the mixture over the chicken breasts.
- Cook Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and sear for 3-4 minutes on each side. Remove the chicken from the skillet and set aside.
- Prepare Potatoes: In the same skillet, add potatoes, olive oil, garlic, Parmesan, salt, and pepper. Toss to coat evenly.
- Cook Dish: Return the chicken to the skillet, on top of the potatoes. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and potatoes are tender.
- Serve: Garnish with chopped parsley before serving.
