  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the Potatoes:

  • 1.5 pounds baby Yukon Gold or red potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C).
  2. Season Chicken: In a small bowl, mix Italian seasoning, smoked paprika, salt, and pepper. Rub the mixture over the chicken breasts.
  3. Cook Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and sear for 3-4 minutes on each side. Remove the chicken from the skillet and set aside.
  4. Prepare Potatoes: In the same skillet, add potatoes, olive oil, garlic, Parmesan, salt, and pepper. Toss to coat evenly.
  5. Cook Dish: Return the chicken to the skillet, on top of the potatoes. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and potatoes are tender.
  6. Serve: Garnish with chopped parsley before serving.

  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
