  • 2 lbs chuck roast (or use ground beef for a quicker version)
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 2 tbsp butter
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves, minced
  • For Stovetop Version:

  • 1 lb ground beef
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/4 cup BBQ sauce
  • 1 tbsp honey
  • Other Ingredients:

  • Corn or flour tortillas (your choice)
  • Fresh cilantro
  • Diced onions
  • Crumbled queso fresco
  • Avocado slices
  • Extra BBQ sauce and lime for drizzling

Instructions

  1. For Slow Cooker Version:

    • Season chuck roast with salt, pepper, smoked paprika, and chili powder.

    • Sear the beef in butter until golden.

    • Place beef in a slow cooker and add BBQ sauce, honey, Worcestershire sauce, and garlic.

    • Cook on LOW for 6-8 hours or HIGH for 4-5 hours until tender. Shred beef.

  2. For Stovetop Version:

    • Brown ground beef in a skillet over medium heat, draining excess grease.

    • Add butter, minced garlic, BBQ sauce, and honey, stirring well.

    • Cook for an additional 5 minutes until everything is well combined and caramelized.

  3. Prepare Tortillas:

    • Warm tortillas in a dry skillet over medium heat, about 30 seconds per side. Brush with butter for extra flavor.

  4. Assemble the Tacos:

    • Fill tortillas with BBQ beef and top with cilantro, diced onions, crumbled queso fresco, and avocado slices.

    • Drizzle with extra BBQ sauce or lime juice.

Notes

  • Substitutions: Swap beef for chicken or pork. Use maple syrup instead of honey.
  • Make it Spicy: Add chipotle powder, jalapeños, or hot sauce to the beef for an extra kick.
  • Dairy-Free Option: Use olive oil instead of butter
