These Frozen Yogurt Granola Cups are a healthy and delicious treat combining a crunchy cinnamon oat and almond butter granola base with creamy Greek yogurt filling, topped with fresh berries.   • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey (adjust to desired sweetness)
  • 1 tsp vanilla extract

Filling & Topping

  • 1 1/2 cups Greek yogurt
  • Berries of choice for topping

Instructions

  1. Prepare the Granola Mixture: In a bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until the mixture becomes sticky and holds together when pressed.
  2. Form Granola Cups: Press the granola mixture firmly into the wells of a muffin tin or silicone mold, shaping them into cup-like forms. Ensure the base and sides are compact for structural integrity.
  3. Freeze the Granola Cups: Place the formed cups in the freezer for at least 30 minutes to set and harden.
  4. Add Yogurt Filling: Once solid, remove the granola cups from the freezer and gently fill each cup with Greek yogurt.
  5. Top with Berries and Freeze: Add berries of your choice on top of the yogurt-filled cups and return to the freezer for another 1-2 hours or until fully set.
