Main Ingredients:
- 3 tablespoons butter
- 3/4 cup finely diced yellow onions
- 3 cloves fresh garlic, minced
- 2 cups chicken broth
- 1 chicken bouillon cube
- 1 cup uncooked long grain white rice
- 2 cups broccoli, fresh or frozen
- 2 1/4 cups cheddar cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon Dijon mustard
- 3/4 teaspoon EACH: Dried oregano, basil, parsley
Breading:
- 1/2 cup all-purpose flour
- 3/4 cup Italian breadcrumbs
- 2 large eggs, beaten
- Vegetable or canola oil, for frying (approximately 40 oz.)
Instructions
- Cook Rice Mixture: In a large skillet, melt butter and sauté onions and garlic. Add chicken broth, bouillon cube, rice, broccoli, and seasonings. Cook until rice is tender.
- Add Cheese: Stir in cheddar, Parmesan, and Dijon mustard until melted and combined.
- Shape Balls: Allow mixture to cool, then form into balls.
- Bread and Fry: Coat balls in flour, eggs, and breadcrumbs. Fry until golden brown.
Notes
- You can customize the filling by adding other vegetables or proteins.
- For a healthier version, you can bake the rice balls instead of frying them.
