  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil, for frying

Cream Cheese Filling:

  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Prepare the Pineapple Rings: Dip pineapple rings in a mixture of dark rum and coconut rum.
  2. Coconut Coating: Combine flour and coconut flakes in a bowl. In another bowl, whisk eggs and coconut milk.
  3. Coat and Fry: Dip pineapple rings in the flour mixture, then the egg mixture, then coat with coconut flakes. Fry in hot oil until golden brown.
  4. Cream Cheese Filling: Mix softened cream cheese and powdered sugar until smooth. Serve with fried pineapple rings.

Notes

  • You can adjust the sweetness by adding more or less powdered sugar to the cream cheese filling.
  • For a non-alcoholic version, you can skip the rum and use pineapple juice instead.
