- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 1/2 cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil, for frying
Cream Cheese Filling:
- 4 oz. cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Prepare the Pineapple Rings: Dip pineapple rings in a mixture of dark rum and coconut rum.
- Coconut Coating: Combine flour and coconut flakes in a bowl. In another bowl, whisk eggs and coconut milk.
- Coat and Fry: Dip pineapple rings in the flour mixture, then the egg mixture, then coat with coconut flakes. Fry in hot oil until golden brown.
- Cream Cheese Filling: Mix softened cream cheese and powdered sugar until smooth. Serve with fried pineapple rings.
Notes
- You can adjust the sweetness by adding more or less powdered sugar to the cream cheese filling.
- For a non-alcoholic version, you can skip the rum and use pineapple juice instead.
