Description

French Onion Chicken & Rice is a comforting and flavorful dish that combines tender chicken, caramelized onions, earthy mushrooms, and creamy rice, all topped with melted Gruyere Swiss cheese.

  • 3 tablespoons butter, divided
  • 3 tablespoons extra virgin olive oil, divided
  • 3 pounds sweet onion (about four large onions), cut in half and sliced with the grain into thick slices
  • 1 tablespoon fresh garlic, minced
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dry tarragon
  • 1 teaspoon dry thyme
  • 1/3 cup brandy or white wine
  • 1 tablespoon Worcestershire sauce
  • 8 ounces button mushrooms, sliced
  • 1 1/2 cups white uncooked rice
  • 2 cups baby spinach, packed (about 2-3 ounces in weight)
  • 3 cups chicken stock (from homemade or boxed)
  • 1 cup heavy cream
  • 34 cups cooked chicken torn into bite sized pieces (from cooking your own chicken or rotisserie)
  • 4 ounces Gruyere Swiss cheese, shredded

Instructions

  1. Cook Onions: Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a Dutch oven over medium heat. Add onions, garlic, salt, pepper, tarragon, and thyme. Cook until onions are caramelized.
  2. Deglaze Pan: Add brandy or white wine and Worcestershire sauce to the pot, scraping up any browned bits.
  3. Add Mushrooms and Rice: Stir in mushrooms, rice, spinach, and chicken stock. Bring to a simmer.
  4. Cook Chicken: In a separate skillet, cook chicken pieces in remaining butter and oil until browned.
  5. Combine: Add cooked chicken to the rice mixture and stir in heavy cream.
  6. Finish: Top with shredded Gruyere cheese and bake until bubbly and cheese is melted.

Notes

  • If you prefer a lighter version, you can use half-and-half instead of heavy cream.
  • Feel free to customize the dish by adding other vegetables like bell peppers or broccoli.
