- 1/2 cup cottage cheese

- Salt and pepper to taste
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp olive oil or butter (for greasing the pan)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil or butter.
- In a mixing bowl, whisk the eggs until well-beaten.
- Stir in the cottage cheese, shredded cheese, garlic powder, onion powder, and salt and pepper to taste.
- Add the optional veggies (spinach, bell pepper, and onion) and mix until evenly distributed.
- Pour the egg mixture into the muffin tin cups, filling each about 3/4 full.
- Bake for 15-20 minutes, or until the egg bites are set and lightly golden on top.
- Let the egg bites cool slightly before removing them from the muffin tin.
- Serve warm, or store in the fridge for later use.
