For the Chicken and Rice:

  • 2 cups cooked chicken, shredded or diced

  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Topping:

  • 1 cup shredded cheddar cheese
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare the Base: In a large mixing bowl, combine the rice, chicken broth, cream of mushroom soup, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well blended.
  3. Assemble the Casserole: Spread the rice mixture evenly into the prepared baking dish. Layer the shredded chicken over the top.
  4. Add the Topping: Sprinkle the cheddar cheese over the chicken layer. In a small bowl, mix the crushed Ritz crackers with melted butter, then spread evenly over the cheese.
  5. Bake: Cover the dish with foil and bake for 35 minutes. Remove the foil and bake an additional 10–15 minutes until the topping is golden and the casserole is bubbling.
