For the Chicken and Rice:
- 2 cups cooked chicken, shredded or diced
- 1 cup long-grain white rice, uncooked
- 2 cups chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the Topping:
- 1 cup shredded cheddar cheese
- 1 cup crushed Ritz crackers (or breadcrumbs)
- 2 tablespoons butter, melted
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare the Base: In a large mixing bowl, combine the rice, chicken broth, cream of mushroom soup, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well blended.
- Assemble the Casserole: Spread the rice mixture evenly into the prepared baking dish. Layer the shredded chicken over the top.
- Add the Topping: Sprinkle the cheddar cheese over the chicken layer. In a small bowl, mix the crushed Ritz crackers with melted butter, then spread evenly over the cheese.
- Bake: Cover the dish with foil and bake for 35 minutes. Remove the foil and bake an additional 10–15 minutes until the topping is golden and the casserole is bubbling.
