Main Ingredients:
- 3 tbsp unsalted butter, divided
- 1 tbsp cooking oil
- 1 medium yellow onion, sliced
- 1/4 cup water
- 3 large eggs
- 2 tbsp chives, thinly sliced
- 2 tbsp mayonnaise
- 1 tbsp Sriracha
- 1 brioche bun, sliced
- 1 slice cheddar cheese
- Salt and pepper to taste
Instructions
- Caramelize Onions: In a skillet, melt 1 tbsp butter and oil. Add onions and cook until caramelized. Add water and cook until evaporated.
- Prepare Eggs: In a bowl, whisk eggs, chives, salt, and pepper. Cook eggs in remaining butter.
- Assemble Sandwich: Mix mayo and Sriracha. Toast bun, melt cheese, layer eggs, onions, and sauce. Enjoy!
