Description

Ingredients

  • 2 English muffins, split in half
  • 2 large eggs
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 4 slices cooked bacon or sausage links, crumbled
  • 1 tablespoon olive oil or butter
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, fresh spinach, or bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C). Place the split English muffin halves on a baking sheet, cut-side up.
  2. In a small skillet, heat the olive oil or butter over medium heat. Crack the eggs into the skillet, cooking them sunny side up or to your desired doneness.
  3. While the eggs are cooking, toast the English muffin halves in the oven for about 5 minutes or until lightly golden.
  4. Once the muffins are toasted, sprinkle each half with shredded cheese, garlic powder, salt, and pepper.
  5. Carefully place the cooked eggs on top of the cheesy muffin halves. Add crumbled bacon or sausage, and any optional toppings you like.
  6. Return the muffins to the oven for 3–5 minutes, until the cheese is melted and bubbly.
