- 2 English muffins, split in half
- 2 large eggs
- 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
- 4 slices cooked bacon or sausage links, crumbled
- 1 tablespoon olive oil or butter
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Optional toppings: diced tomatoes, fresh spinach, or bell peppers
Instructions
- Preheat your oven to 375°F (190°C). Place the split English muffin halves on a baking sheet, cut-side up.
- In a small skillet, heat the olive oil or butter over medium heat. Crack the eggs into the skillet, cooking them sunny side up or to your desired doneness.
- While the eggs are cooking, toast the English muffin halves in the oven for about 5 minutes or until lightly golden.
- Once the muffins are toasted, sprinkle each half with shredded cheese, garlic powder, salt, and pepper.
- Carefully place the cooked eggs on top of the cheesy muffin halves. Add crumbled bacon or sausage, and any optional toppings you like.
- Return the muffins to the oven for 3–5 minutes, until the cheese is melted and bubbly.
