Ingredients

Units Scale
  • 4 English muffins, split
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup cooked breakfast sausage, crumbled
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons butter, melted
  • 1/4 cup pizza sauce (or marinara)
  • Fresh parsley, for garnish

Instructions

Preheat the Oven

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the English Muffins

  1. Brush the split English muffins with melted butter and place them on the prepared baking sheet. Toast in the oven for 3–5 minutes until slightly crispy.

Assemble the Pizzas

  1. Spread a thin layer of pizza sauce over each toasted English muffin half. Sprinkle a mix of cheddar and mozzarella cheese on top.

Add Toppings

  1. Evenly distribute the crumbled bacon, sausage, diced bell peppers, and red onion over the cheese. Crack a small egg on top of each muffin half.

Bake to Perfection

  1. Season with salt, black pepper, and Italian seasoning. Bake for 12–15 minutes or until the egg whites are set and the cheese is bubbly and golden.

Garnish and Serve

  1. Remove from the oven and let cool for a minute. Garnish with fresh parsley and a sprinkle of crushed red pepper flakes (if using). Serve warm and enjoy!

Notes

  • For a firmer egg, bake for a few extra minutes.
  • Swap bacon for turkey bacon or ham for a lighter option.
  • Use different cheeses like pepper jack or gouda for extra flavor.
  • Add spinach, mushrooms, or cherry tomatoes for a veggie-packed version.
