For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

For the filling:

  • 1 cup light corn syrup
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped pecans
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. For the crust: In a mixing bowl, combine the flour, powdered sugar, and softened butter. Add the vanilla extract and mix until the dough comes together.
  3. Press the dough evenly into the bottom of the prepared pan. Bake for 10-12 minutes, or until lightly golden.
  4. For the filling: In a separate bowl, whisk together the corn syrup, eggs, sugar, melted butter, vanilla extract, and salt until smooth.
  5. Stir in the chopped pecans, ensuring they are evenly distributed throughout the filling mixture.
  6. Pour the filling over the baked crust and spread evenly.
  7. Bake for 25-30 minutes, or until the filling is set and slightly puffed up.
  8. Let the bars cool completely in the pan before cutting them into squares. Serve and enjoy!
