Instructions
- Prepare the Ricotta Base: In a small mixing bowl, combine the fresh ricotta cheese with 2 tablespoons of honey, vanilla extract, and cinnamon if using. Stir the mixture until it becomes smooth and creamy. Add a pinch of salt to enhance the flavor.
- Chop and Toast Pistachios: Using a knife, chop the shelled pistachios into small pieces. For added crunch and flavor, you can optionally toast them in a dry skillet over low heat for 2 to 3 minutes.
- Assemble the Bites: If using mini phyllo shells or crackers as a base, arrange them on a serving tray. Spoon about one tablespoon of the ricotta mixture onto each shell or cracker. If you prefer not to use a base, shape the ricotta mixture into small patties or ovals using two spoons and place them directly onto a plate.
- Add Pistachios and Honey Drizzle: Generously sprinkle the chopped pistachios over the ricotta topping on each bite. Drizzle a little extra honey over each just before serving to add sweetness and shine.
- Serve and Enjoy: These bites are best served cold or at room temperature. They can be prepared a few hours in advance and refrigerated until ready to serve.
